Papaya Salad

The perfect summertime dish!


This refreshing papaya salad is a great summertime dish packed full of good nutrients and healthy fats that will complement any dinner or make a great light lunch!

It’s the perfect balance of sweet and refreshing and the best part is that it


is amazing for your gut health. Papaya contains an enzyme called papain, which helps your digestive system break down food–specifically proteins and due to its high water content it helps alleviate symptoms of IBS C by keeping you regular. So ditch the digestive enzymes and eat more papaya!


Pro Tip: When you pick out a papaya at the grocery store, the more green the skin is the more digestive enzymes there are

inside!


For Salad

  • Handful(or two) of butter leaf lettuce

  • Handful(or two) of baby arugula

  • 1/4 of a large papaya–chopped up with skin removed

  • 5 strawberries

  • 1/2 avocado

  • Optional: slivered almonds

For Dressing

  • 2 tbsp of juice from an orange + orange zest

  • 1 tbsp lemon juice

  • 1/2 cup olive oil

  • 1/2 tsp maple syrup

  • salt + pepper to taste


  1. Depending on how big you want to make your salad, put a couple handfuls of butter leaf lettuce and baby arugula in a large salad bowl.

  2. Peel and cut up 1/4 of a large papaya(scoop out seeds and discard before cutting into cubes).

  3. Wash and cut up the strawberries.

  4. Cut up avocado into little cubes–or however you like.

  5. Add papaya, strawberries, avocado, and optional slivered almonds to salad bowl.

  6. Mix all the dressing ingredients together and drizzle on top!

That’s it, super easy and super good!
