Fish Tacos With Mango Kiwi Salsa

This fish taco with mango kiwi salsa recipe is so good for your gut and is perfect for a summer dinner when you want something light. I love tacos and the endless variations you can make, but I have to say this is hands down my new favorite! The mango kiwi salsa is the perfect blend of sweet, tart, and spicy and the greek yogurt sauce is to die for. In addition to the incredible taste, both of these are amazing for your digestive system!

Kiwi is high in vitamins and antioxidants, and helps aid in digestion. This fruit is high in fiber and acts as a natural laxative by improving frequency of bowel movements and softening stool –– booyah! It also contains a digestive enzyme that helps break down proteins in your stomach.

Greek yogurt has to be my favorite food to incorporate into recipes! It’s a great substitute for sour cream and every time I have it my stomach feels so happy. Greek yogurt is loaded with probiotics and also helps with regularity.

So long story short, kiwis help break down the proteins from the fish and the greek yogurt adds good bacteria to your gut, making this the ultimate dish for improving digestive health!

I hope you and your gut enjoy this recipe as much as I do!

XO,

Sarah

For Tacos

12 corn tortillas (or any other kind you like)

1 lb tilapia

1/2 tsp ground cumin

1/2 tsp cayenne pepper

1 tsp salt

1/4 tsp black pepper

1 tbsp garlic infused olive oil

For Kiwi Mango Salsa

1 ripe mango – peeled and cut into little cubes

3 ripe kiwis – peeled and diced

1 handful cilantro – chopped

1 jalapeño – diced (remove seeds for desired spice level)

1/2 tsp salt

Juice of 2 limes

For Greek Yogurt Sauce

1/2 cup plain greek yogurt

2 tbsp lime juice

1-2 tsp sriracha sauce

1 tsp garlic powder

Instructions

Preheat oven for 375 F and line a baking sheet with parchment paper. Combine the cumin, cayenne, salt, and pepper in a small dish and sprinkle over both sides of the tilapia.

Drizzle the garlic infused olive oil over the fish and bake for 20-25 minutes.

While the fish is baking, prepare the kiwi salsa. Combine all ingredients in a bowl (option to lightly sauté the diced jalapeño before you add it in for better digestion).

Combine greek yogurt sauce ingredients together in a bowl and whisk together.

Warm tortillas on the stovetop and assemble your tacos!
